The term Mirepoix comes from the French cooking vocabulary.  Mirepoix (mire ‘eh-pwah) is a combination of chopped or diced carrots, onion, and celery.  The word is believed to have originated around the time of Louis XV.

Mirepoix is frequently used as a vegetable starter for soups, stews, stuffings, sautés, and sauces.

Mirepoix is frequently used as an accompaniment for roasts to add flavor to roasts, especially, the drippings.
